INGREDIENTS
- 1/2 cup Australian Macadamia Nuts
- ½ cup soft dates, pitted
- 2 tbsp cocoa powder
- 3 tbsp honey or maple syrup (optional)
- ½ tsp vanilla extract
- ¼ tsp salt
- 50 dark chocolate, melted
- Sea salt, for garnish

INSTRUCTIONS
- In a food processor, blend the Australian Macadamia Nuts until crumbly.
- Add dates, cocoa powder, honey or maple syrup, and vanilla extract. Blend until it forms a sticky dough.
- Divide the dough into small, bite-sized balls; you could place and press them in a mould or shape with your hands. Refrigerate for 15-20 minutes.
- Melt dark chocolate and dip each energy bite in to coat. You can choose to dip the entire bite, or just half of it.
- Sprinkle a pinch of sea salt on top before the chocolate sets. Refrigerate until firm.
- Store in an airtight container in the fridge for up to a week.
