INGREDIENTS
- ½ cup raw Australian Macadamia nuts (soaked in water for 1 hour)
- 1 tablespoon olive oil
- 1 medium chopped onion
- 2 minced garlic cloves
- 1 cup broccoli
- 1 cup vegetable/chicken broth
- ½ cup milk
- ½ cups shredded cheddar/regular cheese
- Salt and pepper to taste

INSTRUCTIONS
- Make a paste of the soaked Australian Macadamia Nuts.
- Heat olive oil in a pan, sauté chopped onion and minced garlic on medium heat for 5-minutes, until it softens and turns translucent.
- Add the broccoli florets and sauté for about 3-4 minutes.
- Pour in the broth, bring to a boil, and then let it simmer for about 10-12 minutes, until the broccoli is tender.
- Once the broccoli is tender, run the mixture in a blender until smooth
- Transfer it to a pot, add the Australian macadamia nuts puree and milk and let the soup simmer.
- Gradually add the shredded cheese, stirring continuously until it melts and the soup becomes smooth and creamy.
- Season with salt and pepper.
