INGREDIENTS
  • ½ cup raw Australian Macadamia nuts (soaked in water for 1 hour)
  • 1 tablespoon olive oil
  • 1 medium chopped onion
  • 2 minced garlic cloves
  • 1 cup broccoli
  • 1 cup vegetable/chicken broth
  • ½ cup milk
  • ½ cups shredded cheddar/regular cheese
  • Salt and pepper to taste
INSTRUCTIONS
  1. Make a paste of the soaked Australian Macadamia Nuts. 
  2. Heat olive oil in a pan, sauté chopped onion and minced garlic on medium heat for 5-minutes, until it softens and turns translucent. 
  3. Add the broccoli florets and sauté for about 3-4 minutes.  
  4. Pour in the broth, bring to a boil, and then let it simmer for about 10-12 minutes, until the broccoli is tender. 
  5. Once the broccoli is tender, run the mixture in a blender until smooth 
  6. Transfer it to a pot, add the Australian macadamia nuts puree and milk and let the soup simmer. 
  7. Gradually add the shredded cheese, stirring continuously until it melts and the soup becomes smooth and creamy. 
  8. Season with salt and pepper. 
  9. Garnish with fresh parsley, and enjoy your creamy Australian Macadamia Nuts Broccoli and Cheese Soup.
