INGREDIENTS
  • ½ cup broken wheat (gothambu) 
  • ¼ cup Australian Macadamia Nuts, chopped 
  • ½ cup Australian Macadamia Nuts, lightly roasted and pureed 
  • 1 cup jaggery syrup 
  • ½ cup thick coconut milk 
  • 1 cup thin coconut milk 
  • 2 cups water 
  • 2 tbsp + 1 tsp ghee 
  • ½ tsp cardamom powder 
  • 2 tbsp cashews 
  • 1 tbsp raisins 
  • Pinch of Salt 
  • 1 tbsp coconut slices for garnishing (optional) 
INSTRUCTIONS
  1. Sauté the broken wheat with 1 tbsp ghee until slightly brown and pressure cook with 2 cups of water for 2-3 whistles until soft and fully cooked.
  2. Heat the remaining 1 tbsp ghee in a small pan and fry the cashews, raisins and coconut slices until golden brown. Add the chopped Australian Macadamia Nuts and sauté lightly to release their rich aroma.
  3. Heat 1 tsp ghee in a deep pan, lightly fry the Australian Macadamia Nut puree, add cooked broken wheat and jaggery syrup and mix well.
  4. Pour in the thin coconut milk and simmer on medium heat for 10-15 minutes, stirring occasionally until it thickens.
  5. Add the thick coconut milk, stir well and simmer on low heat for 5 minutes.
  6. Take it off the heat, sprinkle cardamom powder and a pinch of salt to balance the sweetness. Top it with the toasted nuts, raisins and coconut slices.
  7. Stir the Gothumba Pradhaman well and let it set for 10-15 minutes. Serve it warm.
