Chicken and macadamia nut cutlet
These crispy little cutlets are perfect as starters or as an accompaniment to a cup of chai. The use of macadamias adds a boost of healthy protein and fats to this popular snack.

INGREDIENTS
- Chicken Mince – 300 gms
- 6 Macadamia Nuts finely chopped
- 5 Garlic Cloves
- 2 Green Chillies
- 1/2 Inch Ginger
- 1 Tsp. Salt
- 1/2 Tsp. Red Chilli Powder
- 1/2 Tsp. Cumin Powder
- 1/2 Tsp. Garam Masala
- 1/2 Tsp. Black Pepper Powder
- Juice of Half Lemon
- 1 Cup Bread Crumbs
- 1 Egg Beaten
- 2-3 Tbsp. Cooking Oil
- Handful of Chopped Coriander
INSTRUCTIONS
- Grind ginger, garlic and green chillies into a smooth paste. You can do this in a blender or with a mortar & pestle.
- Take a large mixing bowl, add minced chicken, chopped macadamia nuts, ginger, garlic and green chilli paste, all the spices, lemon juice and 1 tsp of breadcrumbs.
- Mix it well, divide into 7 equal portions and roll them into round balls.
- Now shape them into cutlets by first flattening each ball slightly, coating them in egg mixture and then rolling them in breadcrumbs.
- Heat oil in a pan and shallow fry these cutlets on both sides until crispy. This process will take upto 8-10 minutes.
- Serve with coriander & mint chutney and sliced onions.
