Tricolor Australian Macadamia Nuts and Mushroom Momos

INGREDIENTS
For the Dough
- 2 cups all-purpose flour (divided into three portions)
- 1/4 cup spinach puree (for green dough)
- 1/4 cup carrot puree (for orange dough)
- Water (for white dough)
- Salt, to taste
For the Filling:
- 1 cup mushrooms, finely chopped
- 1/2 cup Australian Macadamia Nuts, soaked and pureed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 green chilli
- 1 tsp black pepper powder
- 1 tbsp olive oil
- 2 tsp green onion
- 1/2 cup milk
- Salt, to taste
INSTRUCTIONS
To Prepare the Dough:
- Green Dough: Mix 2/3 cup of the flour with a pinch of salt and add spinach puree. Knead until you get a smooth dough. Add a little water if needed. Cover and set aside.
- Orange Dough: Mix 2/3 cup of the flour with a pinch of salt and add carrot puree. Knead until smooth. Add a little water if needed. Cover and set aside.
- White Dough: Mix the remaining 2/3 cup of flour with a pinch of salt and enough water to make a smooth dough. Cover and set aside.
To Prepare the Filling:
- Heat olive oil in a pan over medium heat.
- Add chopped onions and garlic, and sauté until translucent.
- Add chopped mushrooms and cook until they release their moisture and become soft.
- Add the soaked Australian Macadamia Nut puree, milk, black pepper, green onion, and salt.
- Cook for another 2-3 minutes until everything is well combined.
- Remove from heat and let the filling cool.
To Assemble the Momos:
- Divide each portion of coloured dough into small balls of equal size.
- Roll out each ball into thin circles on a lightly-floured surface.
- Use a circular cutter to cut out equal-sized circles from each rolled dough.
- To create the rose shape, take one circle and place another circle halfway over the first one. Continue this process with three coloured circles, overlapping halfway.
- Place a little filling along the bottom edge of the overlapping circles.
- Starting from one end, roll the circles tightly into a cylinder.
- Once rolled, hold the bottom and use your fingers to gently spread and shape the top into petals, forming a rose shape.
- Repeat the process with the remaining dough and filling.
To Steam the Momos:
- Prepare a steamer by boiling water in the base.
- Lightly grease the steamer basket, and gently place the rose-shaped momos, ensuring they do not touch each other.
- Steam the momos for 10-12 minutes or until the dough becomes translucent and the filling is cooked through.
To Serve:
- Carefully remove the momos from the steamer and place them on a serving plate.
- Serve hot with your favorite dipping sauce like chili garlic sauce, or a tangy tomato chutney.
