Tricolor Australian Macadamia Nuts and Mushroom Momos

Gorgeous and delicious, these moreish momos are a unique celebration of India. Mushrooms and Australian Macadamia Nuts come together in a lovely textural mix, and the tricolour rose shape makes this snack a showstopping centrepiece for your celebrations!

INGREDIENTS

For the Dough 

  • 2 cups all-purpose flour (divided into three portions) 
  • 1/4 cup spinach puree (for green dough) 
  • 1/4 cup carrot puree (for orange dough) 
  • Water (for white dough) 
  • Salt, to taste 

 

For the Filling: 

  • 1 cup mushrooms, finely chopped 
  • 1/2 cup Australian Macadamia Nuts, soaked and pureed 
  • 1 small onion, finely chopped 
  • 2 cloves garlic, minced 
  • 1 green chilli 
  • 1 tsp black pepper powder 
  • 1 tbsp olive oil 
  • 2 tsp green onion 
  • 1/2 cup milk 
  • Salt, to taste
INSTRUCTIONS

To Prepare the Dough: 

  1. Green Dough: Mix 2/3 cup of the flour with a pinch of salt and add spinach puree. Knead until you get a smooth dough. Add a little water if needed. Cover and set aside. 
  2. Orange Dough: Mix 2/3 cup of the flour with a pinch of salt and add carrot puree. Knead until smooth. Add a little water if needed. Cover and set aside. 
  3. White Dough: Mix the remaining 2/3 cup of flour with a pinch of salt and enough water to make a smooth dough. Cover and set aside. 

 

To Prepare the Filling: 

  1. Heat olive oil in a pan over medium heat. 
  2. Add chopped onions and garlic, and sauté until translucent. 
  3. Add chopped mushrooms and cook until they release their moisture and become soft. 
  4. Add the soaked Australian Macadamia Nut puree, milk, black pepper, green onion, and salt.  
  5. Cook for another 2-3 minutes until everything is well combined. 
  6. Remove from heat and let the filling cool. 

 

To Assemble the Momos: 

  1. Divide each portion of coloured dough into small balls of equal size. 
  2. Roll out each ball into thin circles on a lightly-floured surface. 
  3. Use a circular cutter to cut out equal-sized circles from each rolled dough. 
  4. To create the rose shape, take one circle and place another circle halfway over the first one. Continue this process with three coloured circles, overlapping halfway. 
  5. Place a little filling along the bottom edge of the overlapping circles. 
  6. Starting from one end, roll the circles tightly into a cylinder. 
  7. Once rolled, hold the bottom and use your fingers to gently spread and shape the top into petals, forming a rose shape. 
  8. Repeat the process with the remaining dough and filling. 

 

To Steam the Momos: 

  1. Prepare a steamer by boiling water in the base. 
  2. Lightly grease the steamer basket, and gently place the rose-shaped momos, ensuring they do not touch each other. 
  3. Steam the momos for 10-12 minutes or until the dough becomes translucent and the filling is cooked through. 

 

To Serve:  

  1. Carefully remove the momos from the steamer and place them on a serving plate. 
  2. Serve hot with your favorite dipping sauce like chili garlic sauce, or a tangy tomato chutney.
